How can I have the edu address as the reply to address on emails I send from my iPad and iPhone?
You're probably going to have to add your .edu account to your iPhone/iPad in order to do that. Or if gmail does that (when you use it from a computer) you might have to try logging in to gmail via their site on your iPhone/iPad versus using the mail app...
