Anyone have any idea why my gmail delivery to my Samsung S8 phone is delayed? Sometimes by 20-30 minutes. At other times up to a full day. And, of course it is intermittent. Please with reply with any ideas you might have.

Same situation. No method to tell it when to sync or how often.

Do you have any background data restrictions enabled on your phone?

Because Android is Google's OS, Google wants you to have no issues using their apps.
Head to Settings---Accounts---Google----The email address you want to have synced and them select mail. Google pushes Gmail. The Gmail app is just an app version of Gmail.com.

Go to the settings > Apps and scroll down to Gmail and select it. In the next screen, touch the data usage line to open that information screen. There should be an option for allowing background data and you should have it set to ON.
Otherwise you can look into Settings > Data Usage and the settings there for background data restrictions.
