Settings > Applications > Application Manager > Calendar > Forcestop
THe path maybe slightly different like Settings > App Manager. I'm going off memory. There is no easy way to uninstall a preinstalled app on Android. You can hide the app in a folder and then simply use the Google cal app. Also, I believe when the device is restarted the app will need to be forcestopped again.

I know it can be done as I have disabled the Samsung calendar on a Samsung phone and used a different calendar application. I don't remember if application information screen said "disable" or "turn off" though.
I'm most definitely NOT a VZW employee. If a post answered your question, please mark it as the answer.
