I have my hotspot up and running, but it only seems to work with other Apple devices. Any way to get this to work with Windows devices so I can get some work done? It looks like it tries to connect, but the laptop gets bumped off.

Yes. I have used it with an iPad, MacBook and two windows laptops. The iPad and MacBook work no problem, but the laptops get booted off.

Hmm...I'm an android, so I can only say that once it's on, usually you can select within the screen (much like a right click to pull up options) and there is customize.

I haven't tested my Windows laptop since upgrading to iOS 9 but with iOS 8 there was an issue with Windows connecting to the hotspot. That wasn't the case early on in iOS 8 but after one of the updates it wouldn't connect wirelessly. If you connect your laptop to the iPhone via the lightening cable it will use the hotspot Internet. Not as convenient as doing so wirelessly but if being able to use the Internet is your main concern it is a workaround to do just that.
