It depends on your current situation. If you let us know the following we can give you better advice:
How much data you have now
How many lines you have
Are you in contract or device payment plans? If so, how many
Keep in mind, switching does not change your contract status or the $40/month device access fee until you are out of contract.

The lines that are on contract will be $40. The lines that are out of contract or on a payment plan with be $20.

The $40 a month is a known bug that needs to be rectified.

The comparison they show you is misleading. It is not showing the More Everything device payment plan discount for each line, and of course the My Verizon plan is showing one line at $40 and the other at $20.
A true comparison (assumption - device payment plan on both phones):
For both, the phone payment stays the same.
For More Everything - it is 15 GB for $100 less your company discount giving you $86.00. Then the access fee is $15 on the device payment plan for 2 lines - so $116 plus your device payments and taxes
For the new My Verizon plan - 12 GB for $80 less your company discount giving you $68.80. Then the access fee for each line is $20 for 2 lines - so 108.80.
Difference is 8 dollars and change less, for 3 GB less data. Your call, but personally I would stay on More Everything, keep the 15 GB data for future expansion and keep your $15 per month device access fees instead of $20/month.

What happens when a More Everything plans devices are finally paid off - do they stay at $15 line access, or bump back up to $40.

You make sure your line has the month-to-month discount applied. For some reason, Verizon doesn't apply this discount automatically; you have to do it yourself.

Thanks. Hopefully the month to month is still $15, and not the new $20 per
month flat rate.
