Why am I showing data usage in the middle of the night when I am not using the phone? Wifi is on.

The timestamp listed is when the usage was reported, not when it was used. It could have been used yesterday and just not reported until timestamp.

I don't think that the answer.  The only use was when wifi was available.   Cellular data should never have been used.

Was the cellular data connection turned off during that time?

A small amount of data use for the device checking in with home base and network checks is normal and can add up to a several megabytes.
