Where are you typing this info when you see this, are you using a app because each app has its own group of information that is indexed for later use and without knowing what or where you are seeing this it makes it hard to figure out it is the keyboard or app that is saving the data.
Is there a app you are noticing this in?
for instance, I use the facebook site and not the app. However when i go to leave a comment and press the spot to do so I see a history of things I have typed as a comment before. Basically, I don't want that history to remain as an option to post again or have anyone see the things I typed previously. I am not saying I want things hidden as far as being secretive because I do hide anything. I am just saying I want the long list of things previously typed to disappear. Also, if I see the little clipboard icon I press on it and see previous things I copied and pasted. I just want to erase it all.There is no need for it to remain on my phone and if my phone ever got lost someone get a hold of personal info.
That sounds like the browser is what you are speaking of.... Open browser (Internet) and Menu / Settings / Privacy and Security / Clear Form Data should resolve this.. Also so you dont have to do this all the time uncheck "Remember Form Data" will stop this.

Launch the text message app.
Tap New Message
Press and hold the "enter message" area for seconds
It will pop up clipboard
You will see what is stored on your clipboard. Tap and Hold the clipboard items for seconds,
You will have a option to delete from clipboard
