What would have caused my son’s Iphone7s to stop access to cellular data 2 weeks ago? How do we troubleshoot this so he has access again? I can’t think of any change we made 2 weeks ago that caused this.

Some questions to kick things off....
What happens when he tries to access the Internet via 4G/LTE? Is he able to access the Internet via WiFi? Can he still make and receive calls & texts? Can he still access Apple's app store?

Everywhere your son goes?
Did he switch into Airplane Mode? Try Toggling Airplane mode.
Try resetting Network Settings.
- Settings > General > Reset.
- Tap Reset Network Settings.

Having a data connection is defintiely a must, please clarify if you can connect to WiFi at all, and which plan are you on?
