Will I be charged roaming fees if I try to use my cell phone while in port in Alaska, namely Juneau and Ketchikan?

You can check the network status, and go back to airplane mode if it says "Roaming" - or turn off roaming so it will not roam.  It may be "Extended network" which is OK.  I took a cruise to Alaska about 6 years ago, Juneau and Ketchikan were two of the cities we visited and I had no additional charges sending texts while in port.

no...are you on post pay or pre account ? prepay will not work there....roaming charges apply if you connected to Canadian cell tower or cruise tower

No it's not pre-pay, just regular service billed monthly. I'm nervous about taking the phone out of airplane mode when the cruise ship docks since I figured the roaming charges would start accruing.

If you have a regular post pay account, Alaska is included. Be aware that Verizon only has LTE in Alaska, everything else is extended network. However, the extended network is no extra charge with your post pay account. I would have no fear turning off airplane mode and using my phone in Alaska.
