E-mail, text messaging, and picture messaging privacy

I don't have text messaging on my phone, so I e-mail my friends. Can their parents get records of our conversations, or even mine, because mine isn't a "real" text message?
Also, can they view photos that my friends and I have sent or received?

Are you emailing to another email or to a phone? If anything is stored in the email account or on the phone and the parents get a hold of it, then yeah they can see it. But if the convos etc are deleted then there's no way to retreive that content without a court order
