I have the full paid version of Verizon Cloud but all options other than Contacts is grayed out under What to Back Up. How do I activate these other options that I'm paying for so I can do a full backup?

Shandycat, being able to use your Cloud is a must. Let's get this figured out. What model phone do you have? Is the app update to date?

Are you sure you're logging into the Cloud using the profile associated with the phone number whose Cloud you are wanting to back up? If you have multiple lines/numbers on your account, they each have their own login and cloud storage.
