Don't worry. Samsung has submitted the update to Verizon for them to verify and begin the roll out this week. Internal date from Verizon Technical Support is today 2-15-15 that the update is available.
That's if the rumored information is correct. You might want to check out the issues that the Galaxy S5 users have been having with the Lollipop update for their devices. It might be worth waiting on the update.

As was suggested as many issues there are in the S5 it might be worth the worry of not Updating because once the Deed is done there is no going back to the previous if there are any issues
There are many factors which go into these issues. Namely, many people who update to Lollipop have installed apps which, unfortunately, do not have compatibility for Android 5.0. Usually, when a huge update is released like this, it really is best to back up all of your data and wipe your phone completely then install the update.
You are so right about installed apps not being compatible with a major system update. But, what if the device itself isn't compatible with the new operating system? This happened when Google updated my Asus Nexus 7 tablet to Lollipop. It rendered the tablet nearly useless because of how slow it became, it frequently locked up and had to be rebooted, and on and one. Asus blamed it on Google, Google blamed it on Asus. Because I didn't buy the tablet from Google Play, Asus won't replace it. All they will do is reset it back to it's original state when I bought it, and I have to send it to them and pay $120?
All I hope is that I either have a new phone before VZW pushes Lollipop to S4 users or that it doesn't cause the problems that NG6 caused. Because of those problems, I have never intalled NG6 or NK1.
