I cannot hide apps on my Note 3 that I just receive 10/13/2013. I was back in a different Verizon store today and notice that you could on the Note 3 in their store. Is there a difference in the what the two stores carry?

If you do not want or need a pre-installed apps, Settings>Application manager and open it. Scroll left to "ALL". Scroll down the list until you come to an apps you do not want, click on it and click on "Turn Off."  You might have to uninstall any updates before you can turn off the apps. It will disappear from your Apps Drawer and will not take any battery usage or memory. For all practical purposes, it is no longer on the phone.

I have the Note 3 - not sure what you mean by hiding apps --- you should be able to take them off your home screen, or any of your other screens, if you want.

I also use an app called Nova for managing apps and screens and launchers on my phone.  Try that out and see if it lets you do more of what you want to do.
