I am traveling internationally. I am going to turn off my iphone 6S Cellular Data and mostly use my phone for messaging when I'm in a Wifi hotspot and mostly to other iphone users. However, when I am not in Wifi, I want to make to block any incoming message that has image or video (mms), or if not block it, strip out the multimedia. This is so I don't incur any possible charges. I assume with my Cellular Data turned off, it should be impossible for me to recieve the mms message while not in Wifi. Is this right? What exactly would happen to a text message with a photo attached to it if sent to me while not in wifi, with Cellular Data off?

Do you have the option for wifi calling? I would suggest turning it on for your trip.
