I am looking for an app whereby I can dictate a message into the phone and save it as a text, Word or PDF document.
Or...is this already on my phone somewhere and I didn't see it?

To dictate a message to save in a text format, you will have to look in the market place for a “Notebook” like application. The native messaging application will not save to a text file.

The HTC Incredible does have a speech to text option which is preinstalled on the device. I have given the instruction on using this feature below:
-Click on your “Messages” icon
-Create a new text message
-Input your “To:” contact
-In the compose field, you can use the speech to text option which is the microphone on your virtual keyboard. (It will be the second button on the bottom left hand side of your virtual keyboard)
-Once selected you will get a “Speak now" option. Dictate what you want your text to say and you can send it once completed.
