I changed my email address on ICloud, and now my Iphone 6s will not recognize my account. I can't do a back up on iTunes because I have to turn off Find My Phone, which can only be done if I enter my password and the OLD account. What do I do? I do not want to continue using the old account (it was hacked).

I understand your concern with wanting to get the informtaion updated on the iPhone. On the phone have you deleted the old email address that was assoicated with iCloud and try to enter in the new?
