I have a Samsung S3 running Kit Kat. How do you properly use the best SECURITY available to connect with Laptop. Running Windows 7 PRO 64-bit, along with WPA2-AES encryption. Any special Verizon apps? Just don't want any security holes on 4G LTE while hotspoting to my laptop.

The hotspot requires a password. Set it to known devices only, no other will see the phone.

The most secure way is to USB tether the laptop to your phone, and then share your connection that way. This assumes you only want your laptop to connect to the phone's data connection.
Otherwise, WPA2-AES is what you should stick with as a good choice. Anything else should be pretty moot - just keep traditional computer security in mind. Don't download lame stuff, don't run as administrator, and stay on top of your patches.

That's what I do currently but sometimes I don't tether while riding
