So I have read that verizon is going to GSM on January 1, 2021. Please tell me this is true. Verizon is the only carrier that works in Thomaston, GA. Would love to be able to get the phone I want, not the very few choices we currently have.

GSM vs CDMA is an old dated war. All US carriers use LTE for data. What matters more are if the phone supports the radio bands each respective carrier uses.

The only thing that is happening is the shut down of 3G. GSM and CDMA are dated standards since LTE is what is used for data.
You're still going to have to be mindful of what radio bands an unlocked phone supports if it's one Verizon doesn't carry.
