Whoops, looks like you edited your post on me. One of the default screens on your Eris should be for favorite phone contacts. Just click on the plus sign on the favorites page and it will prompt you through to add a contact. You can then edit the contact and make "send message" the default action for that contact.

You can put your phone "favorites" on one of your screens and then set the default contact method for that person as text message. Then when you touch that person's contact widget on the screen, it will take you to a text screen headed for that person.
