If you're referring to automatic app updates, open the Play Store app, press the three dashes in the upper left-hand corner, and tap Settings. Tap Auto-Update Apps and change it to Do Not Auto-Update Apps or to Auto-Update Apps Over W-Fi Only.

My problem is that it automatically updates my phone when I'm driving and
not in WiFi range so it uses up my data and I ended up going over all
because of updates. I want to stop the auto updates. I know how to update
my phone.

This is what my phone's are set to as Well.. One thing to Note or pass on.! Every once in a While Google will update it's Play Store and I've notice when it does it kicks out the old settings that was on Last OS of G.P.S
So to keep the Play Store from updating a bunch of Updates at the same time the Setting that tikibar1 mentioned will have to be re-instated..
