As noted earlier, did you try looking in the settings of the phone app? It may differ with the S5, but on an S4, you open the phone app, then tap Menu, then Call settings, then place a check where it says Turn Off Screen During Calls.

There should be a setting in the phone app to Turn Off Screen During Calls.
