How can one change the default e-mail from Gmail to Comcast?

What do you mean by the default email? You can certainly set up pop accounts, but I think you are required to have a Gmail account.

If you mean within the Email app, just open it, then open whichever account you want as your default, click Menu > Account Settings > click Default Account.  On the main Accounts screen it will place a checkmark next to the default account.

I deleted my Verizon GMail account from the Email app since there's already a separate GMail app.

No sense in getting two notifications for every email...
