I've been playing with the new Galaxy Note 2 for over 4 hours now and when I try to use Google Wallet it says "Unfortunately, Google Wallet is not yet available for your device or mobile network"
Any thoughts?

There are ways around this - can't specifically mention them here as the post will get removed.
I have been using google wallet on my Gnex for the better part of a year and it works wonderfully.

Doesn't work... GNex and a Note 2 are different animals. We've been through this on a specific forum which can't be mentioned here.

The libs work on that model. The libs from the Sprint version works on US cellular. They do not work on AT&T/T-Mobile or any of the international versions. Verizon's version has just been released so until someone does it then it may or may not work.
